Simple Syrup with leftover fruit

Don’t throw away those apple cores, fruit peels or juiced lemons and oranges. Save the planet and make them into a fruit infused simple syrup. They make a great addition to your bar cart or as a flavour booster to soak into cakes.

2 cups water

1 cup sugar

Various fruit scraps – approx. 1-2 cups (squeezed out citrus halves, citrus rinds, clean apple or pear cores)

Add all ingredients to a medium saucepan and cook on medium heat for 10 minutes or until sugar is dissolved. Remove from heat and let flavours steep for another 10 minutes. Strain and store liquid in a glass container in your fridge.
