Lime Chipotle Aioli


This lime chipotle aioli sauce is to die for! I mean it has lime in it so it can't be bad right? You can use a store bought mayo and skip that part, but from scratch is so easy!

Ingredients:



2 pastured egg yolks


½ cup coconut oil, melted


½ cup olive oil


1 teaspoon white vinegar


1 teaspoon mustard powder


Salt and freshly ground pepper, to taste


½ lime, juiced


½ teaspoon chipotle powder, or more to taste


½ teaspoon smoked paprika


1 teaspoon hot sauce

Directions:

1. Place the egg yolks in the bowl of a food processor with the vinegar and mustard powder. Process for about 30 seconds, tilting the processor to a side to help move the egg yolk around. 2. Combine the coconut oil and olive oil and drizzle it in through the top of the food processor as slow as you can. It’s extremely important to go very slow. Once the mixture reaches the desired thickness, turn the machine off. You might not use all of the oil, depending on how thick you want it. 3. Stir in the remaining ingredients by hand and adjust the flavors to taste, if necessary. Serve with your favorite roasted vegetables or meats.
