Beef Tortellini Soup


This Beef Tortellini Soup is the one. Like I mean THE ONE. Even my guy who is not a huge soup fan (I know, I should leave him, but he gives good... foot massages. Yeah, that’s what he gives) 😇 

Anyhoo! Considering we are basically living in a deep freeze this winter, I’ve been living on hot soups and stews. If my outside can’t be warm, at least my insides can be! 

INGREDIENTS: 1 lb lean ground beef Medium onion, diced 4 cloves garlic, minced 1/8 tsp red pepper flakes 27oz canned, chopped tomatoes 18 oz tomato sauce 4 cups low sodium beef broth 2 tsp Italian seasoning 2 tsp Worcestershire sauce 2 tsp balsamic vinegar 1 pound fresh or frozen tortellini 8 oz cream cheese, softened 1/2 cup Parmesan, grated 1/4 cup basil, chopped Pepper to taste INSTRUCTIONS: 1. Cook ground beef and onion over med-high heat until meat is browned and onions are tender, about 7-10 minutes. Drain excess grease. Add garlic and pepper flakes 

2. Place into large soup pot.

3. Into soup pot add: can tomatoes, can sauce, broth, Italian seasoning, Worcestershire, vinegar and tortellini.

4. Bring to a boil, reduce heat and simmer until tortellini is cooked. 5-7 minutes.

5. Add cream cheese and parmesan. Cook until they have melted into the soup. Mix in basil. Serve
