Spice up that boring Grilled Cheese Sandwich


After the success of combining jalapeño poppers with grilled cheese sandwiches (presto the jalapeño popper grilled cheese sandwich was born) I was wondering what other delicious delights I could turn into grilled cheese sandwiches. I take all of the flavours of a food that I am already totally into and use them in a grilled cheese sandwich. This is a switch on a classic bar food, buffalo chicken wings, which is one of my favourites flavours for chicken winds and basically anything else that uses a hot sauce. Whoever invented buffalo hot sauce is a culinary god to me, even more so than the one who invented Sriracha.

I started by making a quick buffalo chicken salad. From there I sour dough bread, some cheddar cheese which melts nicely and a touch of blue cheese to get that real “bar” taste into the sandwich. If you hate blue cheese don’t add it. Not exactly rocket science and I can’t believe I actually felt the need to write that. My personal trick to help make sure that cheese melts nicely is to bring it up to room temperature before you grill the sandwich.

Buffalo Chicken Grilled Cheese

Ingredients:

1/4 cup cooked shredded chicken, warm

1 tablespoon buffalo hot sauce

1/2 tablespoon mayo (optional)

1 tablespoon carrot, grated

1 tablespoon celery, sliced

1 tablespoon green or red onion, sliced or diced

1 tablespoon blue cheese, room temperature, crumbled

1/3 cup cheddar cheese, grated and brought to room temperature

2 slices sourdough bread (or other)

1 tablespoon butter, room temperature

Instructions:

  1. Mix the chicken, hot sauce, mayo, carrot, celery and onion in a small bowl.

  2. Butter the outside of each slice of bread, sprinkle half of the cheeses on the inside of one slice of bread, top with the buffalo chicken salad, the remaining cheese and finally the other slice of bread.

  3. Heat a non-stick pan over medium heat.

  4. Add the sandwich and grill until golden brown and the cheese has melted, about 2-4 minutes per side.
