Moms’ Blueberry Muffins

Makes 24 muffin


4 eggs

2 cups white sugar

1 cup oil

1 tsp vanilla

4 cups flour

1 tsp salt

1 tsp baking soda

2 cups sour cream or Greek yogurt

2 cups blueberries

Opt: lemon zest


  1. Heat oven to 400 degrees

  2. Beat eggs. Gradually add sugar.

  3. Add oil while beating on low

  4. Stir in vanilla

  5. In medium bowl mix together flour, baking soda, salt and zest

  6. Alternate adding portions of the flour mixture and sour cream to the egg mixture

  7. Fold in blueberries

  8. Bake 20 minutes until done

Sounds delicious. Hubby picked us the mother load of blueberries in White River so I am looking for recipes for them. I love blueberries in anything.
