OMG Buttermilk Pancakes

These ones deserve the name OMG Buttermilk Pancakes. because all we kept saying as we took bite after bite was OMG, OMG, OMG. And there was not a church in sight.



INGREDIENTS:

  • 2 cups all-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 2 TBSP granulated sugar (I use maple infused sugar)

  • 2 cups buttermilk

  • 2 large eggs (lightly beaten)

  • 1 tsp vanilla extract (or maple)


INSTRUCTIONS:

Whisk all your dry ingredients together in a large bowl.


Combine buttermilk, beaten eggs and extract. Whisk into the dry ingredients. DO NOT overmix! You’ll still see quite a few small lumps and that is perfectly fine.


Put the batter aside for 8-10 minutes. I MEAN IT, LEAVE IT ALONE LIKE YOUR MOM WHEN SHE’S CRANKY!


While the batter is resting, heat a large pan or skillet on med-high heat. Test the pan by placing a drop of water in the pan. If it spits at you like a llama you are good to go.


Brush on oil or butter lightly (or use Pam, but don’t lol)


DO NOT STIR THE BATTER EVER AGAIN! Never you hear me? E. V. E. R.


Ladle 1/3- 1/2 cup onto the pan for each pancake. 1/2 = 10-12 Pancakes.




Check the bottom for a golden brown colour and for bubbles on top and then flip the pancake and cook until golden. (If your pancake darkens too fast drop the heat down a bit)



Smother with butter, syrup, jam and make all sorts of weird noises while chewing with your mouth open and mumbling OMG.
